কলকাতা, 4 ডিসেম্বর: 8 ডিসেম্বর অর্থাৎ, রবিবার থেকেই পাউরুটি, কেক, বিস্কুট, প্যাটিস, পিৎজা ব্রেড-সহ একশো রকমের বেকারি পণ্যের দাম বাড়ছে ৷ প্রায় 30-35 শতাংশ দাম বাড়ানো হচ্ছে ৷ বুধবার আনুষ্ঠানিকভাবে একথা ঘোষণা করে পশ্চিমবঙ্গ বেকার্স কো-অর্ডিনেশন কমিটি ৷ সংগঠনের মূল বক্তব্য, বেকারির 100 রকম খাবার তৈরিতে প্রয়োজনীয় কাঁচামালের দাম অনেকটাই বেড়েছে ৷ সেই কারণেই দু’বছরের ব্যবধানে ফের দাম বাড়ানো হচ্ছে ৷ বেকারি শিল্প ও এর সঙ্গে জড়িত শ্রমিকদের কথা চিন্তা করেই দাম বাড়ানোর সিদ্ধান্ত নিয়েছেন সংগঠনের সদস্যরা ৷ তাঁরা অভিযোগ করেছেন, পরিস্থিতি নিয়ন্ত্রণে কেন্দ্র-রাজ্য উভয়ের দ্বারস্থ হয়েও কোনও সমাধান মেলেনি ৷ তাই, সাধারণ মানুষের থেকে সহযোগিতা চেয়েছেন তিনি ৷
পশ্চিমবঙ্গ বেকার্স কো-অর্ডিনেশন কমিটির সাধারণ সম্পাদক শেখ ইসমাইল হোসেন বলেন, “পাউরুটি ও বেকারিজাত দ্রব্যের উৎপাদনের কাঁচামালের দাম ব্যাপক হারে বেড়ে যাওয়ায় একশোটি বেকারিজাত পণ্যের মূল্যবৃদ্ধি করা হল ৷ সরকার কাঁচামালের দাম নিয়ন্ত্রণে রাখতে পারেনি ৷ তাই একেবারে নিরুপায় হয়েই পাউরুটি-সহ বেকারিজাত সমস্ত দ্রব্য যেমন-কেক, বিস্কুট প্রভৃতির মূল্য 30-35 শতাংশ বৃদ্ধি করতে বাধ্য হচ্ছি ৷” বতর্মানে রাজ্যব্যাপী প্রতি 400 গ্রাম পাউরুটির দাম 32 টাকা ৷ দাম বাড়ার পর তা হবে, 36 টাকা ৷ 200 গ্রাম পাউরুটির দাম 16 থেকে 18 টাকা হচ্ছে ৷ আর প্রতি 100 গ্রাম পাউরুটির দাম 8.50 টাকা থেকে 9 টাকা করা হচ্ছে ৷ সংগঠনের দাবি, পুরনো দামে বেকারির খাবার তৈরি করা সম্ভব হচ্ছে না ৷
উল্লেখ্য, 2022 সালের নভেম্বর মাসে শেষবার মূল্যবৃদ্ধির সময় কাঁচামালের দাম ছিল-
ময়দা- 3 হাজার টাকা প্রতি কুইন্টাল
চিনি- 3,800 টাকা প্রতি কুইন্টাল
ডালডা/তেল- 100 টাকা প্রতি কেজি
পলিথিন ব্যাগ- 200 টাকা প্রতি কেজি
জ্বালানি কাঠ- 800 টাকা প্রতি কুইন্টাল
বর্তমানে ডিসেম্বর, 2024 সালে কাঁচামালের দাম-
ময়দা- 3,700 টাকা প্রতি কুইন্টাল
চিনি- 4,200 টাকা প্রতি কুইন্টাল
ডালডা/তেল- 150 টাকা প্রতি কেজি
পলিথিন ব্যাগ- 250 টাকা প্রতি কেজি
জ্বালানি কাঠ- 1 হাজার টাকা প্রতি কুইন্টাল
একইভাবে বেকারি শিল্পে ব্যবহৃত কেমিক্যাল যেমন, গ্লুটেন ও ক্যালসিয়ামের দাম 25 শতাংশ ও বিদ্যুতের দাম 60 শতাংশ বেড়েছে ৷ এই সবদিক খতিয়ে দেখে এবং রাজ্যে বেকারি শিল্পকে বাঁচিয়ে রাখতেই দাম বাড়ানোর পথে হাঁটছে তারা ৷ সংগঠনের সাধারণ সম্পাদক বলেন, “আমার-আপনার সকলের খরচ বেড়েছে আয় বাড়েনি, তা সকলের জানা ৷ কেন্দ্র-রাজ্য উভয় সরকারের এদিকে দৃষ্টিপাত করা উচিত ৷ আমাদের সংগঠনের সঙ্গে যুক্ত প্রায় তিন হাজার বেকারিতে ওতপ্রোতভাবে পাঁচ লাখ মানুষ জীবিকা নির্বাহ করছেন ৷ প্রতিদিন কলকাতাতে চার লাখ এবং গোটা রাজ্যে প্রায় 10 লাখ পাউন্ড পাউরুটি আমরা বিক্রি করে থাকি ৷ ফলে এই শিল্পকে বাঁচিয়ে রাখতে এবং শিল্পের সঙ্গে জড়িত শ্রমিকদের পরিবারকে বাঁচিয়ে রাখতে, আমরা দাম বৃদ্ধির পথে হাঁটতে বাধ্য হচ্ছি ৷”

The government could not control the price of raw materials. Therefore, all the bakery products, including bread, etc. Cakes, Biscuits etc. are forced to increase their prices by 30-35 per cent ” Currently, the price of bread per 400 grams across the state is Rs.32 After the price hike, it will be Rs. 36 The price of 200 grams of bread is Rs 16 to 18 And the price of bread per 100 grams is being increased from Rs 8.50 to Rs 9 The organization claims that it is not possible to make bakery food at the old price.

Looking at all these aspects and keeping the bakery industry alive in the state, they are walking on the path of increasing the prices The general secretary of the organization said, “It is known to all that the expenses of all of you have increased and the income has not increased. Both the central and state governments should look into this. Approximately five lakh people are making a living in about three thousand bakeries associated with our organization. Every day, four lakh in Kolkata and We sell about 1 million pounds of bread in the entire state. So to keep this industry alive and the families of the workers involved in the industry alive, we are forced to walk the path of price hikes. “
